Pizza is typically one of those more indulgent comfort foods that we all crave. I love this recipe because it is gluten free, dairy free and is SO easy to make. Whip this casserole up next weekend as a nutrient-dense replacement for traditional pizza!

Ingredients
  1. 1 spaghetti squash
  2. 3 large gluten free spicy sausages (approximately 460 grams)
  3. 1 tbsp coconut oil
  4. 1 red pepper
  5. 1 yellow pepper
  6. 1/2 sweet onion
  7. For the pizza sauce
  8. 3 large tomatoes
  9. 1 clove garlic
  10. 1 tbsp dried oregano
  11. 1 tsp red pepper flakes
  12. 1 tsp dried basil
  13. 1/2 tsp of Himalayan sea salt
  14. 1/2 tsp of pepper
Instructions
  1. Pre-heat oven to 350.
  2. Cut spaghetti squash, remove seeds and place in oven face up for approximately 45 minutes or until softened (check periodically by piercing squash with a fork).
  3. Remove sausage meat from casing and cook in a skillet with coconut oil until fully cooked.
  4. Add onion and peppers and continue to sauté until softened.
  5. Place all sauce ingredients in blender or food processor and blend until smooth.
  6. Remove flesh ("spaghetti") from the squash and place in casserole dish.
  7. Add pizza sauce mixture and stir.
  8. Add sausage, onion and pepper mixture and combine fully.
  9. Bake casserole in oven at 350 for 20 minutes.
  10. Remove and enjoy :)
Notes
  1. You may add 1/2 cup cheese to the top of the casserole before baking if you please.
